Freeze drying with advantage plus instrument

I freeze dry with advantage plus Virtis SP scientific, wizard 2.0 and I am having issues with the set point starting at different temperatures,

1.please explain to me what the set point signifies in the process of freeze drying and where it should start.

2.Will the set point affect the process of freeze drying if not started at the right set point?
